Chilaquiles Rojo with Tempeh

Ingredients

  • 2-3 tomatoes or can of tomatoes
  • >5 serrano chiles
  • 12 onion (you can add more, we are just, always worried about adding too much)
  • 3 cloves of garlic
  • 8oz tempeh
  • soy sauce
  • hot sauce
  • 5 eggs
  • cilantro
  • many tortillas (we used 10)
  • quarter of red onion
  • oil
  • cheese

Directions

  1. cut tortillas into triangles/diamonds
  2. fry the tortillas
  3. set the fried tortillas aside
  4. make the tomatoes into a sauce and heat it up in a pot
  5. chop the onion and garlic
  6. carmelize the onion and garlic in the pan before pouring it into the sauce
  7. finely dice the serrano and add it to the sauce
  8. Slice the tempeh along the long axis to thin it out, then into slices
  9. fry the tempeh with some soy sauce and habanero sauce to season it
  10. scramble the eggs and set aside
  11. pour the sauce, tempeh, tortillas, and egg into your pan
  12. add cheese
  13. cook a bit more
  14. serve with cilanto and red onion
